This classic French potato soup can be served hot or cold. It is very rich so I love it with a simple green salad, a french baguette, and some crisp white wine.
It is traditionally served topped with chopped chives. Here I finished it with crispy leeks. Bon Apetite!

1 large yellow onion
5 large white potatoes - peeled and sliced
Salt and pepper to taste
1 bay leaf
5 cups of organic chicken broth
1/4 cup of heavy cream or 1/2 cup half and half
Fresh thyme and marjoram (can be substitute with dried)
Classically served topped with snipped chives

In a heavy bottomed stock pot
Saute onion until translucent
Add sliced potatoes
Add chicken broth and bay leaf and cook until potatoes are cooked through when pierced with a knife
Puree in a food processor or blender
return to pot and stir in cream and herbs
season with salt and pepper to taste
top with chopped chives
