“Moonstruck” Egg in a Nest

Egg in a Nest

Ingredients

Ingredients

  • One thick Slice of Bread, preferably from a whole artesian type loaf
  • One large organic pastured, free-range egg
  • Olive oil 
  • Salt and pepper to taste
  • Salsa or topping of choice. Often this is served with roasted red peppers on top.

My version has a cannellini bean salsa that I had made the day before and I thought it would be delicious with this.  Fresh tomato, avocado, and basil works nicely too.  Don't forget a nice little drizzle of olive oil to finish!

Instructions

  • Heat olive oil slightly in a fry pan 
  • Pull away the doughy middle part of the bread and pan fry on each side slightly
  • Crack the egg in the center of the bread and cook, flipping once (or not, for sunny side up) to the desired doneness
  • Finish with your choice of topping
