Deliciously Healthy Goji Berry Granola

This is healthy and satisfying after a morning workout. We enjoy it just about every day in our house. Be prepared to make some friends with this too!

Recipe

  • One can of organic Old Fashioned Rolled Oats
  • One Cup of Pecan Pieces
  • One Cup of Raw Pumpkin Seeds
  • 1/2 Cup Extra Virgin Olive Oil
  • 1/2 Cup Vermont Maple Syrup
  • One tablespoon Cinnamon
  • One tablespoon Vanilla Extract
  • One tablespoon of Himalayan Pink Salt
  • One 7oz package of Dried Goji Berries
  • One Cup Dried Sweetened Cranberries
  • Mix Oats, Pecans, Pumpkins Seeds and Salt together
in a small sauce pan warm up olive oil, Maple Syrup, Vanilla and Cinnamon
Pour this over the dry ingredients and mix thoroughly
Bake in a preheated 350-degree oven (oven’s vary so keep an eye out -careful not to burn)
for approximately 30 minuets stirring half way through
remove and cool completely (I usually leave it overnight)
add Goji berries and cranberries
Makes approximately 20 1/4 cup servings
