Pucker up for a Popsicle

Who doesn’t enjoy something cold, creamy and sweet during the scorching Summer months.  Unfortunately, many commercial popsicle brands on the market are loaded with GMO’d cane sugar, high fructose corn syrup and artificial colors. Fresh Fruit is at its peak during these months, so it’s the perfect time to make these delicious, refreshing popsicles. Our super simple version gives you the option of choosing your favorite combination of fresh fruit and some healthier sweetener options as well.  Our sweetener of choice is “Sweet Leaf” stevia brand www.sweetleaf.com, organic coconut sugar or wild, local honey. Later in the season, real maple syrup would also be delicious, especially in combination with pomegranate, cranberries or pear.

Good coconut water gives them a great  tropical flavor. We love www.harmlessharvest.com coconut water, but there are many options if you don’t care for the taste of coconut water; nut, soy or hemp milk, yogurt, juice or good old H20.

Super Summer Pops

Yield 6 Popsicles

Ingredients

2 pints of fresh raspberries (or the equivalent of your choice of fresh fruit)

1/4 teas Sweet Leaf stevia (or 1/8 cup coconut sugar)

1/4 Cup Harmless Harvest Coconut Water (or you favorite brand)

Blend all ingredients together

Stain (pushing down to remove all the liquid)

Pour into molds and freeze

If necessary, run under warm water for a few seconds to release them from molds.

Courses Snack/Dessert
