Mise en Place for Minestrone Soup

Fall and Winter weekends are meant for soup!  Improvise by using whatever veggies, beans and starch you have on hand.  For this recipe cannelini beans and orzo pasta are used with a variety of veggies leftover from this weeks Farmer's Market shopping.  If you have some homemade broth on hand, all the better, but organic store bought is fine.  Serve with freshly grated Regianno Parmesan and some crusty bread and you have a soul satisfying meal that will cure what ails you!  Make a big batch to enjoy all week long and don't forget to freeze some for a later date.Minestrone
